TestQual 20A Acrylamide

**This PT is not accredited**

About the analytes

Acrylamide is a compound that is formed when food is coocked at high temperatures and low moisture. Some of the process that can form acrylamide are baking, toasting and frying, just like potato chips are prepared.1

This compound is widely found and ingested when preparing and cooking the food and since these practices are followed during all lifetime, EFSA in 2015 published a full risk assesment about acrylamide and found that it can cause cancer in all age groups.1

Due to the difficulty of approching the levels of acrylamide in food the european union published and came into force a regulation with guidelines to reduce the levels of acrylamide in food. With this regulation in the upcoming years is expected to reduce the levels of acrylamide found in food.2
